Savory Winter Soup - Submitted by C. Williams
Ingredients: bag of collard greens, head of red cabbage, ten-piece chicken thighs, large can of low sodium tomato paste, four carrots, olive oil, 6 sprigs of rosemary, 5 sage leaves, tablespoon of bouillon flavoring (high salt)*, paprika, two tablespoons of garlic paste, 6 garlic cloves, salt and pepper, and 1/4 quart of water. You will need a medium size stock pot.
1) Put pan on medium heat. Sautee onions and 1/4 of the herbs in pan with small amount of olive oil until onions caramelized.
2) Turn down heat to low. Pour in tomato paste, cut carrots, and rest of herbs. Chop head of red cabbage and place in pot.
3) Trim fat from chicken thighs. As you cut, do not work with any food or utensils before washing your hand (do not cross contaminate). Place each chicken thigh in pot.
4) Add bag of collard greens, add more pepper, and cover pot.
5) Cook on low heat for 90 minutes.
